Instructions for making this sugar-free cheesecake

  • Start by making the dough: Put sweetener in a bowl and add an egg. Whisk it thoroughly until the ingredients are mixed and it starts to turn to foam.
  • Add flour and continue whipping. Whisk thoroughly to give it a fluffy texture.
  • Grease the mold with oil or butter and pour in the dough.
  • Bake it in the oven at a low temperature  until the dough is crisp and golden.
  • For the filling, beat the two remaining eggs with the rest of the sweetener (1/2 bag).
  • Mix the cream cheese in it along with the lemon juice and lemon zest and  continue whipping until well blended.
  • When ready, take the bottom out of the oven and pour the filling on top.
  • Put it back in the oven at 180ºC. The time it takes to bake it will depend on the oven. So check often how it is doing. It should be ready after 15 to 25 minutes.
  • Take it out of the oven and let it cool in the mold. If you try to remove it from the mold while it is still hot, it will break. Wait until it has settled before doing so.
